Balsamic Glazed Chicken Breasts

4 chicken breasts

3 tbsp Mazzetti Balsamic Vinegar of Modena

3 tbsp soy sauce

1 tbsp olive oil

salt & pepper to taste

2 tsp brown sugar

2 garlic cloves minced

70ml of chicken stock

1 onion sliced

4 chicken breasts

1/4 cup Mazzetti Balsamic Vinegar of Modena

1/4 cup soy sauce

1 tbsp olive oil

salt & pepper to taste

2 tsp brown sugar

2 garlic cloves minced

1/4 cup of chicken stock

1 onion sliced

FOR THE GLAZE SAUCE

  • Step 1.

Stir together the chicken stock, balsamic vinegar, soy sauce, brown sugar, salt and pepper. Heat in a small pan for about 5 minutes until the sauce thickens. If sauce is not thick enough, you can stir in a mixture of 2 tsp cornflour/cornstarch

 

PREPARE THE CHICKEN

  • Step 2.

Remove some of the glaze sauce and glaze the chicken breasts. Pop the chicken on a baking tray and bake in the oven for 15-20 minutes (depending on the size of your chicken breasts, it could take longer), at 356°F then let to rest for 5 minutes under foil.

  • Step 3.

In a pan saute the onions for 10 minutes and then add the minced garlic for 1 minute until soft then add the glaze to the pan and warm through then take off heat.

  • Step 4.

Pour over the balsamic glaze mix over the chicken and serve with greens and potatoes.
